TECHNICAL FIELD OF THE INVENTION The present invention relates to a watch winding crown comprising a crown head intended to be coupled in axial displacement and rotation to a winding stem of a watch movement via a barrel housed in the crown, said barrel comprising a coupling cylinder, coaxial and rotationally fixed with the winding stem, said winding crown comprising torque limiting means interposed between the crown head and the winding stem, said limiting means comprising a modulus elastically deformable in the axial direction of the winding crown and a deforming element integral with the barrel, a contact surface of which, in contact with the elastically deformable module, has a profile which, on a revolution around the axis of the winding crown, varies in the axial direction of said crown, said profile being chosen so that the modu the elastically deformable element and the deforming element are engaged when a rotational torque exerted on the crown head is less than a predetermined value and the elastically deformable module slides on said contact surface of the deforming element when a rotation torque exerted on the crown head exceeds said predetermined value. The present invention relates inter alia watch winding crowns arranged in a watch middle band by means of a crown tube fixed in said middle band, being coaxially connected to the winding stem by a cylinder sliding axially in the inner bore of the crown tube, the crown head being manipulated in rotation and / or in translation by the user. The watch crowns concerned by the present invention can be used to reassemble a mechanical movement, to adjust and / or control a particular functionality of a mechanical movement or a quartz movement, or to provide several of the above functions . STATE OF THE PRIOR ART Whatever the type of crown, a problem specific to all lies in the transmission of the torque of the crown to the winding stem, and therefore to the mechanism, when a rotation is applied to the crown head by a user . Indeed, excessive torque is likely to damage the mechanism. This is why different torque limiting systems have already been proposed to transmit to the rod a rotational movement according to a limit torque and for it to occur a disengagement beyond this limit torque, to protect the movement. The patent application FR 2 974 430 describes a torque watch winding crown associated in axial displacement and in rotation with a threaded pin passing through a housing, via a tube fixed thereto, in connection at one of its ends with a winding stem of a drive mechanism. Three flexible blades, elastically deformable, are integral with the crown and form between them an equilateral triangle, said blades cooperating in training or deformation with the head of the tapped axis which has three or six right sides in the triangle formed by the blades. It has been found that this device does not give satisfaction if the number of flexible blades is different from three, and the number of right sides is necessarily three or a multiple of three. The possibilities of varying the value of the safety limit torque are therefore limited. Similarly, the use of this device to accompany the rotation of the crown head by a kind of rattling felt by the fingers of the user is not appropriate. The patent application CH 707 739 of the applicant describes a winding crown of the defined type of input, namely in which the torque limiting means comprise an elastically flexible part in the axial direction of the crown and a workpiece of flexion having a surface in contact with the flexible part has a profile which, on a revolution about the axis of the ring, varies in the axial direction of the ring, which is chosen so that the flexible part and the piece of bending are engaged when a rotational torque exerted on the crown head is less than a predetermined value and the flexible member slides on said surface of the bending member when a rotational torque exerted on the crown head exceeds said predetermined value . In this winding crown, the crown head is integral in rotation with an elastic washer constituting said flexible part, said spring washer comprising radial blades resiliently flexible in the axial direction of the ring. The winding crown described above can be a problem after a certain period of use. Indeed, the repeated bending of the radial blades of the spring washer can cause a phenomenon of fatigue of these blades, the temporary deformation of the latter becoming over the course of more or less definitive deformation cycles. This results in a lowering of the limit torque beyond which the crown head and the winding stem are uncoupled in rotation, so that the winding crown no longer performs its function correctly. STATEMENT OF THE INVENTION In view of the techniques and devices currently used, the invention aims to provide a watch with a winding crown of the type defined input that does not have the disadvantage mentioned above. To do this is proposed a watch winding crown having the features of claim 1. In other words the invention relates to a winding crown comprising a crown head intended to be coupled in axial displacement and in rotation to a winding stem of a watch movement through a barrel housed in the crown, said barrel comprising a coupling cylinder, coaxial and rotationally integral with the winding stem, said winding crown comprising torque limiting means interposed between the crown head and the winding stem , said torque limiting means comprising an elastically deformable module in the axial direction of the winding crown and a deforming element integral with the barrel, a contact surface of which, in contact with the elastically deformable module, has a profile which, on a revolution about the axis of the winding crown, varies in the axial direction of the crown, said profile being chosen so that the mo elastically deformable dule and the deforming element are engaged when a rotational torque exerted on the crown head is less than a predetermined value and the elastically deformable module slides on said surface of the deforming element when a torque of rotation exerted on the crown head exceeds said predetermined value, the elastically deformable module consisting of an indexing washer and a return spring. The winding crown according to the invention therefore has the advantage of separating the indexing and deformation functions. The indexing of the system is ensured by the washer while the deformation is ensured by a dedicated component, namely the return spring. Modes of execution of the winding crown according to the invention are defined by the dependent claims Another object of the invention is a watch comprising a winding crown as defined above. DETAILED DESCRIPTION OF EMBODIMENTS An embodiment of a winding crown according to the invention is shown in the assembled state in FIG. 1 and exploded view in FIG. 2. The crown shown in Figs. 1 and 2 comprises a crown head 4, notched externally to facilitate gripping, and internally bored to accommodate most of the device according to the invention. The crown head 4 houses an insert 1. The insert 1 comprises a base whose diameter is substantially equal to the diameter of the bore of the crown head and an insert head whose transverse dimensions are smaller. The base of the insert 1 is integral in rotation with the crown head 4, in which it is driven. A flat sealing gasket 7 is interposed between the two. An indexing washer 3 is engaged on the head of the insert 1. The indexing washer 3 is locked in rotation on the head of the insert 1 but can slide on it in translation. This blocking is ensured by an appropriate conformation of the contact surfaces between the indexing washer 3 and the insert 1, which will be described later. The insert 1 has a double inner bore. The larger diameter bore located on the inside of a housing receiving the crown, can accommodate a tube (not shown in the figures) for fixing the crown to the housing. The bore of smaller diameter of the insert 1, located on the side of the crown head 4, accommodates a barrel 2. The barrel 2 comprises a hollow cylinder 2a for fixing a winding stem and a coaxial disc 2b to said hollow cylinder. The hollow cylinder 2a is engaged in the bore of smaller diameter of the insert 1, an o-ring 6 being interposed between them. The disk 2b whose diameter is greater than that of the cylinder, and may be close to the inside diameter of the crown head 4, is housed in the crown head 4, wedged axially by a central central bulge of the crown head, and free in rotation relative to the inner wall of the crown head. The front surface of the disc 2b facing the indexing washer 3 comprises a peripheral portion in relief, having a profile varying along a revolution of the workpiece about the axis of the crown, in the kind of the circumference of the disc. This profile, which can be obtained in particular by milling, preferably has an elementary pattern which is repeated an integer N times on a revolution around the axis of the crown, in this case along the circumference of the disc 2b . Figs. 3 and 4 show two examples of such patterns. Fig. 3 shows a profile of symmetrical notches which allows a sliding of the indexing washer in both directions of rotation relative to the barrel with the same limitation of torque in both directions. Fig. 4 shows a profile of asymmetrical notches which allows a rotation of the spring washer relative to the barrel only in one direction, with the limitation of torque. As shown in particular in FIG. 5, the indexing washer 3 comprises a substantially disk-shaped inner portion, largely recessed in its center, which carries on its outer periphery a number of radial blades. Figs. 2 and 5 show an embodiment of the indexing washer 3 in which the radial blades are short. As can be seen in fig. 5, the inner contact surface of the indexing washer 3 and the outer contact surface of the head of the insert 1 form a four-sided coupling, the head of the insert driving the indexing washer in rotation while leaving it free in axial translation. As shown in FIG. 1, the index washer 3 is applied against the disk 2b of the barrel 2 by means of a return spring 5, which rests at its other end in a groove in the base of the insert 1. The radial blades come in abutment against the head 2b. of the barrel 2 and exert a pressing force in the axial direction of the crown against the contact profile of the peripheral portion of the disk 2b. When a torque is applied by the user to the crown head 4, the latter is transmitted to the insert 1 and transmitted to the indexing washer 3. It then encounters a resistance torque of the transmitted gun 2 to this one by the stem of the winding. As long as the latter torque is weak, the indexing washer drives the barrel in rotation. When this torque exceeds a limit value that can be chosen and adjusted by the manufacturer of the winding crown and / or the watch, the indexing washer 3 slides on the peripheral profile of the barrel 2 which is momentarily no longer driven. Those skilled in the art will observe that in the embodiment described above, the blades of the indexing washer, short, are chosen so as not to deform significantly. The return spring 5 is a dedicated piece to support the elastic deformation of the deformable module in the case of indexing washers whose radial blades are short. 5. The angular spacing between two successive radial blades is adapted to the angular amplitude of the elementary patterns of the peripheral portion of the disk 2b. In the embodiment shown in FIG. The number of radial blades is equal to the number N of elementary patterns that the barrel disk has on its periphery. But this is not mandatory, the number of blades may be less than the number of notches formed on the periphery of the disk: thus, the sliding trip torque can be adjusted by acting on the force of the spring 5, the number of blades, as well as the conformation of the contact surface of the blades and the notch patterns. The triggering torque of the sliding of the indexing washer on the barrel can also be adjusted by playing cumulatively on the force of the spring 5, on the profile of the disc of the barrel 2, and on the geometric shape and the material of the blades of the washer, especially if the latter are long enough, as in the embodiment of a spring washer as described in the document CH 707 739. In the embodiment illustrated in FIG. 5, the coupling between the head of the insert 1 and the index washer 3 is a four-sided conformation, which is a good compromise between reduced play and robustness. But this coupling could also be a coupling with 2, 3, 6, sides, or a coupling with teeth or key.
